Step 1

Heat oil in a saucepan over a medium heat, add the bacon, aubergine, carrots, leeks, celery, celeriac, courgette, mushroom, tomato purée, garlic purée and mixed herbs, cook for 3 to 4 minutes, stirring occasionally

Step 2

Add the betaquik®, stock cube, chopped tomatoes and water, stir and simmer on a low heat for 10 minutes.

Step 3

Add in the dried spaghetti and cook for 5 minutes.

Step 4

Pour the soup into a bowl and sprinkle Parmesan cheese over the top before serving.

  • 30g Tinned chopped tomatoes
  • 100g Water
  • 5g Dried spaghetti, broken into small pieces
  • 4g Parmesan cheese, grated
