In a bowl combine double cream and K.Yo berry. Cover and place in the freezer for one hour.
Take a 5cm biscuit cutter and place on top of the cooked biscuit. Add the ice cream mixture into the middle of the cutter and then place into the freezer.
After two hours cut round the frozen ice cream and remove the cutter. Then place the other biscuit on the top to make your ice cream sandwich.
